Camille Pagé notes in " La coutellerie depuis l'origine jusqu'à nos joursthat knives manufactured in St.Étienne in the 19th century were sold by the "gross" ; their prices would vary depending on the quality of each of their denomination:

Over the course of the French regime in New-France however, many records seem to indicate that clasp knives came in only 3 sizes.

Small:

In the 1711 inventory of Cadillac's possessions at Ft. Pontchartrain there is mention of "3 dozen small Siamese knives (petit couteau siamois) with blackened handles"27

Noted in Saint-Pierre's accounts in Charles Nolan Lamarque's account book from 1 September 1735 to 3 September 1736, Montreal..."4 gross small clasp knives", "18 doz. small clasp knives (Sciamois)".(ANQ-M: Livre de compte de Charles Nolan Lamarque, 1727-1729 et 1734-36, microfilm M-4.)

Medium:

In the 1715 ledger entries of the Montreal outfitter Monière..."1 dozen Siamese knives, medium size". 27

In the 1758 ledger entries of the Montreal outfitters Monière and Brouillard concerning the outfit of trade goods, equipement and supplies that they provided to the trade Jean Chapron, we can read "1 gross of medium-size Siamese knives, round tip", "1 gross of medium-size Siamese knives, pointed tip". 27

Noted in Saint-Pierre's accounts in Charles Nolan Lamarque's account book from 1 September 1735 to 3 September 1736, Montreal..."2 gross medium clasp knives". These were destined for the Chagouamigon trade.(ANQ-M: Livre de compte de Charles Nolan Lamarque, 1727-1729 et 1734-36, microfilm M-4.)

Large:

The 1701 cargo manifest of the founding brigade of Ft.Pontchartrain contained a reference to "2 gross of large folding knives (Flatin) at 19 livres 10 sols (per gross)". 27

In the 1711 inventory of Cadillac's possessions at Ft. Pontchartrain there is mention of "3 dozen and a half large Siamese knives (grand couteau siamois) with browned handles...4 dozen and 2 large Siamese knives (grand couteau siamois) with yellow handles (*most likely boxwood handles)". 27

From Rochefort to Mississipy 1701.  Extracts  from the certificates for the Provisions made in 1701 for the King's Service, and sent to Mississipy on His Majesty's vessel l'Inflame for the fort at Biloxy. (Funds of the Colonies F1A 200)..."Four gross of medium large pocket knives at 14 livres per gross, 20 gross of large pocket knives at 12 livres per gross.
